English muffins are not really muffins: the yeast batter is cooked on a griddle, making these âmuffinsâ a type of Americanized crumpet, a cross between a pancake and a flatbread. Rings like these give English muffins their characteristic shape. They are often preheated with the griddle, then batter is spooned into them and the muffins are cooked on one side before the rings are removed and the muffins flipped over to finish cooking.
